[HOT LIST] Mother's Day brunch

Brunch at Beverly Hills Grill. Photo by Nicole Rupersburg.

Easter brunch is pretty much a practice run for Mother's Day brunch. If the way to a man's heart is through his stomach, the way to mom's heart is through fancy brunch buffets and prix fixe menus. The more she raves about how nice the place is and how you're spending too much money on her, the more you win. Here are some of metro Detroit's best for Mother's Day brunch!

[HOT LIST] Raw | Vegan | Organic

These should really all rightfully be their own separate categories, but this ain't California and we ain't dreamin'. For a person adopting the raw and/or vegan and/or organic lifestyle, the options in metro Detroit are just a wee limited. BUT! They do exist, and that's why we're here, so here they are.

Photo courtesy of Detroit Zen Center, Hamtramck
1) Living Zen Organics Hamtramck
The Detroit Zen Center, in what is probably the most ethnically diverse (and more significantly, integrated) square mile of Michigan lovingly referred to by locals as "Hamladesh," is a residential community of Buddhist monks and students who practice the Zen Buddhist lifestyle of daily meditation, manual work and arts. Living Zen Organics is their on-site raw vegan cafe and store that is used to support the Center. They carry local and organic products and also sell their own goods at Eastern Market on Saturdays (and Tuesdays through summer). They're only open on weekends; check out their Facebook page for the weekly menu. The kale chips and their Sunday brunch are the must-haves.

2) Harry's Health Bar Livonia
This raw/vegan-friendly spot inside Zerbo's Health Foods store is a real find. Raw tacos, anyone? Wash them down with some "Green Energy:" strawberries, pineapple, apple, kale, spinach, dandelion, ginger, raw power, coconut water and agave nectar (the fruit overpowers the greens; it's much better than it sounds). All raw juices and smoothies are made with certified organic fruits and vegetables, and all other ingredients are carefully "screened and researched to assure you of optimal benefit." We appreciate the looking out!

3) The Treehouse for Earth's Children Farmington
The Treehouse is a health market that sells vitamins, organic bulk herbs, organic produce, natural remedies, biodynamic gardening preparations, alternative therapy books and other resources. They run Sunday health seminars, workshops led by health consultants, and have an on-site massage therapist. They also have a vegetarian deli and a raw food buffet Sundays from 1-6 p.m. Raw carrot cake, please!

4) Sprout House and MacRobiotics Grosse Pointe Park
An organic grocery store and vegan/vegetarian cafe that serves over 50 different antibiotic-free foods, including homemade soups and sandwiches. Order something fresh from the counter or grab something pre-made out of the cooler for lunch on the go. Try their Mediterranean Tofu Sandwich, packed with spices and leafy greens on hearty whole grain bread. For those on board with "the whole raw thing" but not on board with giving up certain animal byproducts, check out their raw cheese counter.

5) The RAW Cafe Midtown, Detroit
Welp. If the raw movement is going to gain momentum anywhere in metro Detroit, it's going to be in Midtown. The RAW Cafe serves soups, salads, sandwiches, smoothies, and all RAW (all caps, like the name, for emphasis). Owner LaKeta McCauley is passionate in her feelings that a raw, organic, vegan diet will nourish the body and even treat cancer; she should know, she went through it herself. She acquired certifications as an herbalist, blood cell analyst and natural health practitioner, wrote a book, and opened the Cafe where she serves unprocessed, untreated, enzyme-rich and nutrient-dense food. Everything is uncooked, organic and vegan; if you're a raw food n00b, start with their popular wraps.

Real Detroit Weekly: The Traveling Fork

"The Traveling Fork, located inside the Radisson Hotel in Livonia, is named for its cross-cultural traveler appeal. 'This menu is driven towards good American cuisine from different parts of the country,' says Gary Bradt, Executive Chef and Director of Food & Beverage for the hotel.

'Being housed in a hotel presents its own unique set of opportunities and obstacles alike. On the one hand, you have a built-in customer base, so you must also be able to cater to a wide variety of tastes and budgets. On the other hand, it can be difficult to separate your identity from that of the hotel. In a built-up suburban monolith like Livonia, surrounded by a shopping center, competing hotels and countless big-budget monster corporate chain restaurants, forging that individual identity is a challenge..."

Midwest Young Chef's Competition

On Saturday, March 21st the Confrérie de la Chaîne des Rôtisseurs will be hosting the Midwest Jeunes Commis Rôtisseurs Culinary Competition at Schoolcraft College. Schoolcraft College has very respected and internationally acclaimed one-year certificate programs in Culinary Arts, Culinary Baking and Pastry Arts, and Culinary Management. There is also an on-campus student-operated restaurant called The American Harvest (students work under the direction of award-winning Certified Master Chef Dan Hugelier), and many of their Chef instructors and students have won national and international competitions.

Students of the Culinary School as well as other area amateur chefs will be competing in this year's Midwest Young Chef's Culinary Competition, hosted by the Chaîne des Rôtisseurs. The Confrérie de la Chaîne des Rôtisseurs is an international gastronomic organization with roots dating back to 1248. They welcome both the industry professional and the amateur foodie into their fold, and are opening this event to the public.

The competition will be held at the Culinary School which is inside the VisTa Tech Building at 18600 Haggerty Rd. in Livonia. Young chefs will be preparing their dishes from behind glass windows and those curious to see what goes on in such an intense kitchen competition are invited to watch. Afterwards, there will be an awards ceremony, induction, and banquet at the College beginning at 6:30PM. Again, this event is open to the public.

The competition will ensue as follows:

Each competitor is to receive an identical mystery basket, permitting them to compose a
three-course menu of their choice prepared for four (4) people, consisting of individual
plates for Appetizer, Main Course, and Dessert. After examining the mystery basket,
competitors shall have 30 minutes to write out a three course menu, and only after the 30
minutes has elapsed, be allowed to commence preparation at their designated kitchen
station. They then have 3 hours to prepare the items and must begin the presentation to the
Jury within their designated 30 minute window (10 minutes for each course, consecutively,
and strictly timed).

Each of the three courses will be judged independently by the following criterion:

Taste - Maximum 15 points
• Balance of four basic tastes.
• Maximum 15 points, awarded by tasting judges.
• Flavors must work in harmony; no over-powering flavors.
• Appropriately seasoned food.
• Avoid competing flavors on the plate.
• Accurately cooked food items.
• Hot foods must be served hot, and cold foods must be served cold.

Presentation - Maximum 5 points
• Maximum 5 points, awarded by tasting judges.
• Judges will be looking for visually appealing presentations that show creativity and
innovation. Each entry must show a proficiency of skills using; contrasting or
complementary colors, shapes, flavors, sizes and with a variety of mediums while
maintaining consistent portion sizes.
• The portion must be appropriate to the dish and to the standard rules of nutrition.
• Strong visual impact and harmony of colors.
• Meat and vegetable juices should not make a dish look unappetizing.
• Points will be deducted for vegetables that are not cut/turned uniformly.
• Plate arrangements should be practical yet appealing and should comply with the current
industry trends.
• Must use more than 50% of each mandatory food item.
• Deductions will be made for:
o Inconsistent portioning
o Disproportional sauce and garnishing to main piece
o Unappealing presentations

Originality - Maximum 10 points
• New creation of dishes and preparation of food.
• Maximum 10 points, awarded by tasting judges.
• Primarily based on the originality of the artistic work and the degree of difficulty and
effort.

(There is also a separate judging criterion used by the kitchen judge for technique.)

See for yourself what Michigan's up-and-coming young chefs are capable of in the kitchen! The Young Chef's Competition Awards Banquet is $95.00 per person to attend, and must be paid for in advance. You may make checks payable to:

Robert S. Levine
Bailliage du Michigan
761 Falmouth Drive
Bloomfield Hills, Michigan 48304

There will also be another Confrérie de la Chaîne des Rôtisseurs dinner at Iridescence on Friday, March 20th (the evening before the competition) at 7:30PM for a cost of $140.00 per person. This will be an 8-course degustation menu with accompanying wines appropriate to the tastings. Reservations must be made in advance, make checks payable to above.

Viva la Chaîne!
