[Metromode] Where's the Beef in Metro Detroit? (and Lamb, Pork, and Duck)


Morrisey named one of his seminal albums Meat is Murder. Comedian Denis Leary took that one step further in his 1992 stand-up special No Cure for Cancer, saying, "Meat tastes like murder, and murder tastes f@#%ing good.

With all the love for vegetarians and vegans going around, it would seem like our carnivore friends are merely an afterthought. Vegetarians get their own cookbooks and whole recipe sections of cooking magazines dedicated solely to their lifestyle. So do the gluten-free folks, who are quite literally the one-percenters of the world, and yet have permeated mainstream eating. Vegans, they get their own lists and guides and books and TV shows and other special snowflake treatment. Not sure if someone is a vegan? Don't worry, they'll go out of their way to tell you.

[Real Detroit] The Dish

-HOLY DUCK: Monk. The new concept just opened last week in the Bastone complex in downtown Royal Oak in what was formerly Café Habana. Same owners, same chef and an even Belgian-ier version of sister restaurant/brewery Bastone. Think: burger with foie gras, goat cheese and pancetta. Duck fat fries with four different kinds of house-made mayo. Pork belly waffle sandwiches. And 38 bottles of Belgian beer on the wall.

-Hard rawker fans of 101.1 WRIF can now enjoy their very own signature beer. Made in Detroit by Detroiters for Detroiters, WRIF Lager, a collaboration with Detroit's Atwater Brewery, is a light traditional German-style lager. Geared towards the Every Man, the beer's tagline is "Word hard, play hard." Find it on tap at Atwater, CJ Mahoney's in Troy, State Bar in Detroit, the Blarney Stone in Berkley and Albert's on the Alley in Garden City.

I would like to know what kind of parachute journalism led to Grub Street plucking Townhouse Bistro in Birmingham out of obscurity to highlight as THE bar to represent all of Michigan's craft cocktail scene. As opposed to Roast or the Oakland or Sugar House or any number of other places with far more of a reputation for craft cocktails. I'm actually impressed by how impressively ill-researched this is. Congratulation, Grub Street, on being the worst parachute journalists of the week. [Grub Street]

Erp. Make that second-worst. Business Insider blog-sourced this little round-up of Detroit's "coolest businesses" and managed to not only only highlight those not yet out of diapers, but also included a business that exists only as a roaming pop-up, two more that haven't even yet opened, and another that has closed. Detroit Restaurant Week started last week and runs through this Saturday; here is a preview of the three newcomers to this year's spring lineup -- Santorini Estiatorio, Brizola, and Wolfgang Puck Pizzeria and Cucina. [Model D]

Why not just call it "Meaddale"? Ferndale's B. Nektar Meadery recently expanded into a second production facility with a tasting room and Schramm's Mead – owned by world-renowned mead-man Ken Schramm – is set to open later this spring. In the meantime, get your mead fix at B. Nektar's first-ever Spring Mead Fest on Saturday, 4/20 at 1505 Jarvis from noon to 6 p.m. There will be food from Treat Dreams, Green Zebra, Detroit BBQ Co. and Dee's Hot Dog Stand. Limited-release meads will be on draft and they'll also release their new bourbon barrel-aged mead, Episode 13 – B. Nektar Strikes Back.

[NEWS BITES] Royal Oak to Welcome Monk: Belgian Beer Abbey, Craft and Bastone Brewery expansion this Spring

Remember when I first told you about Monk back in December? Well, here is the full press release (including more news about Bastone expanding and basement lounge Commune being re-branded as Craft), which you are probably about to see get re-posted a LOT.


Something big is brewing at the corner of Fifth and Main streets in downtown Royal Oak this spring. Restaurants that have won over customers for years are transforming or expanding – all in the name of craft beer.

CafĂ© Habana will make way for Monk, a Belgian Beer Abbey. Commune Lounge will become Craft, and Bastone Brewerywill expand to two levels. Vinotecca will feature a new wine and food menu. All locations are part of Union Brewery, LLC., whose owners invested $300,000 to make these changes possible and to improve the overall experience at each venue. All three projects are expected to be completed and open spring 2013.

On Feb. 24, and after nine successful years, Café Habana closed its doors, allowing the owners to develop the space as Monk.

“It wasn’t without hesitation that we closed CafĂ© Habana,” said David Ritchie, operating partner, Union Brewery, LLC. “CafĂ© Habana has always had very solid sales, but we decided to move forward with our plan to strengthen the Belgian theme that Bastone Brewery was built on.”

Loyal Café Habana customers can look forward to future plans that include a new, bigger space elsewhere in Royal Oak.

In the meantime, newcomer Monk will offer a deep, rich monastery feel with wood that will reach 10 feet high along its walls. A lantern style lighting package will accentuate the natural color scheme.

Monk will follow a similar layout to CafĂ© Habana, but will feature new banquettes and tables. Other changes include: new doorways, an expanded kitchen, a new sit-down counter and flat screen TV’s.

Seating capacity will remain the same inside, but Monk will add a new outdoor patio with 36 seats along Fifth Street.

Monk’s menu will offer unique chef-created burgers, mussels, frites, and waffle sandwiches. In addition to serving Bastone Brewery’s Belgian style craft beer, guests can expect an extensive bottled Belgian beer list as well as French wine selections.  Monk will open every day at 4 p.m. for dinner only.

Next door, the Bastone Brewery expansion will add 1,500 square feet to Bastone’s floor plan in the space along Fifth Street on two levels. The main floor expansion will add six tables for guests, and the second floor, which will overlook Bastone’s bar, will have a capacity of 20. It will be designated for private parties.

To celebrate the expansion, Bastone Brewery has released new imagery for its six signature beers on tap, which will be featured in new advertising, branding, social media, merchandise and apparel.

Located beneath Bastone Brewery, the venue, currently known as Commune Lounge, will soon be renovated and re-emerge as Craft. The new concept aims to create a hip 1970s look and feel. Imagine vintage record players, bicycles, Edison bulbs, wallpaper, wood panels and a fresh color scheme.  Additionally, a wall of old speakers will be installed behind the bar to add to the whimsical basement vibe.

Craft will feature a new stage for live music on Wednesday and Thursday nights; and will continue to welcome a DJ Friday and Saturday nights.

“We want it to embody the craft of musicians as well as the craft of beer, spirits and unique cocktails,” said David Ritchie.

Craft, in addition to keeping absinthe on the menu, will serve an array of exclusive craft beer cocktails, craft spirits -  such as Civilized - a full bar, Bastone beer and more.

New websites and social media networks are in progress to be launched for each venue.

Of note, Vinotecca Wine Bar will remain as it is, but will offer a new menu this year.

Dan Gearig of El Guapo - Fresh Mexican Grill and The Mac Shack is showing metro Detroit how to build a better food truck with his new food truck fabrication business Red Beard Customs. So I posed this question: "Question: will Biggby Coffee be accused of being an evil corporate empire a la Starbucks once they go national, or will people still consider them a 'local' company that we should support since they're headquartered in MI? ~Guy Fieri failed to buy the full domain name for Guy's American Kitchen + Bar. So this guy did instead. And put up an "alternate" menu with items like "Superbowl Bash Bro'det ($37.95): a bidet jammed to the brim with bubbling, overflowing Velveeta over a hidden layer of hamburger-fisted pig skins and a generous sprinkling of Dirty South Couch Crumbs.
